Chuck pot roast is a beloved family tradition.  There are two good reasons pot roast is considered the classic Sunday dinner:  tremendous flavor and an unbeatable price.  Slow cook a good chuck roast in your oven, a crock pot, or a Dutch oven over a campfire until it's fork tender, and you have the stuff on which family memories are made.  The flavor comes from the heavily exercised shoulder muscles — the same muscle groups on pigs produce pork shoulders (commonly known as Boston Butts), widely considered the most flavorful cut of pork.  In fact, if you are are looking for a break with tradition, try smoking a big chuck roast just as you might a pork shoulder.  Decidedly different and delicious!
