Extremely lean, boneless, and intensely flavored. Best when marinated and sliced thinly across the grain, which means it is perfect for stir frying. It's also our favorite cut for drying as beef jerky. We marinate it in whatever concoction suits our fancy (just as long as it's always heavy in soy sauce and spices!) and dry it in a food dehydrator until it is shelf stable, but not over dried and crunchy. Any way it is prepared, flank steak is a favorite for the Paleo dieters or the fitness purists looking for clean protein.
